If you leave the sushi out for so long, it will rot and give the customers food poisoning. Thus, they will pay less for that. Collect it while it's fresh!
Be careful, Sushi Master Zen may mix up the sushis with soap, scrub and brush during his rush. The customers will get angry if you pick them up.
