For best streaming quality when connecting to iPad, cancel connection once the initial streaming has begun. Now reconnect the devices. This clears out extra code and delivers faster, clearer video / audio.

Video will record in better quality on the streaming device (camera). So even if something is interfering with your connection, the recorded video will come out looking good.

Video quality is limited to your device's camera. So make sure the area you are monitoring has enough light.
