Before the luxuries of transport and trade were available, it was necessary to save provisions during challenging weather and geographical conditions.
It was common for Lebanese caregivers to prepare jar of preserved vegetables, fruits, and dairy products to stock as provisions to be used when resources were scares.
Today however, such issues are no longer a concern as supermarket are only a drive away, still many prefer to have a home made taste of carefully prepared recipes.
